Knitted in the savannah's undergrowth, these holes (trous) revealed the presence of an underground stream named “le bras du Saroît.” With caution, we would venture there to fish the abundant trouts. To get there, we had to cross the land of Mrs. Delphine—a.k.a. la Phine—the village nanny. Assembled and harmonized in our winery, Trous de la Phine is tannic with wild and spicy aromas. This wine goes well with red meat, venison, and cheeses. You should let it breathe and drink it at room temperature.
